Cheesy Chicken Enchiladas With Creamy Sauce
  1. Set oven to 375°F and grease a 9×13-inch dish.

  2. Sauté onion in olive oil, add garlic, spices, and chicken.

  3. Melt butter, whisk in flour, add broth, and thicken.

  4. Remove from heat, stir in sour cream, chiles, and seasonings.

  5. Mix cheeses, fill tortillas with chicken and cheese, roll, and place seam-down.

  6. Spread creamy sauce over enchiladas, sprinkle reserved cheese.

  7. Cover with foil, bake 20 minutes, uncover and bake 10–15 minutes more.

  8. Let cool 5 minutes, garnish, and serve warm.
