Bloom the gelatin: Sprinkle 1 tablespoon of unflavored gelatin over 2 tablespoons of cold water in a mug. Let it sit undisturbed for 5 minutes until thick and spongy. Do not stir this resting period allows the granules to fully hydrate and prevents lumps later.
Heat your water: While the gelatin blooms, heat ¾ cup of water until warm. Target roughly 160–170°F (70–75°C). A kettle works well simply let it sit for 2 minutes after boiling before you pour. You can also microwave the water for about 60–70 seconds. The goal is warm, not scalding. Boiling liquid breaks down gelatin’s protein chains and will give you a flat, ineffective drink.
Dissolve: Pour the warm water directly over the bloomed gelatin. Stir consistently for 1–2 full minutes. The mixture should transition from cloudy to clear as the gelatin granules fully dissolve. If you see any undissolved specks, continue stirring. A small whisk works better than a spoon here.
Add lemon and sweeten: Squeeze 1–2 teaspoons of fresh lemon juice into the dissolved mixture and stir. Taste it. If you prefer a hint of sweetness, add half a teaspoon of stevia or monk fruit and stir again. Avoid honey or regular sugar at this stage, as added sugars undercut the weight-management purpose of the drink.
Drink warm: Sip the drink slowly while warm, ideally 15–20 minutes before your largest meal of the day. This timing allows the gelatin to create gentle stomach volume before you eat, which naturally reduces portion size.
