Prep the Pork. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Place the pork chops in the pan, ensuring not to overcrowd it; you may need to work in batches. Sear the chops on both sides, adding the remaining olive oil if necessary.
Place Pork Chops in Crockpot. Place the pork chops in the bottom of your crockpot. Ensure they are spread out evenly to allow for even cooking.
Season. Sprinkle the ranch dressing mix and au jus gravy mix evenly over the pork chops.
Add Flavor. Place whole banana pepper rings on top of the pork. Feel free to pour in ¼ - ½ cup of the banana pepper juice for extra punch.
Add the Butter. Slice the butter into pieces and distribute it over the top of the pork and peppers. This will melt and create a rich, flavorful sauce as it cooks.
Cook. Cover the crockpot and set it on low. Let it cook for 6-8 hours, or until the pork chops are tender and easily pull apart with a fork.
Serve. Once done, serve the pork chops with the delicious sauce spooned over the top.
