Creamy Chicken Chorizo Pasta
  1. Start by boiling a large pot of salted water, and cook the pasta according to package instructions until al dente. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until it’s browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.

  3. In the same skillet, add the chorizo, and cook it until it’s crispy and golden, approximately 3-4 minutes. Add the minced garlic and sauté for another minute, allowing the garlic to become fragrant.

  4. Pour in the heavy cream and stir well to combine. Then, mix in the Parmesan cheese until the sauce is smooth. Season with salt and pepper to your liking.

  5. Add the chicken back into the skillet along with the drained pasta. Toss everything together until it’s well coated. Cook for another 2-3 minutes to heat everything through.

  6. Garnish with fresh parsley, and serve warm!
