Preheat oven to around 180-200°C
Add rice, onion, sundried tomatoes, spinach, pesto, yoghurt, stock and seasoning to a baking dish
Mix well
Stir through the chopped chicken
Cover with foil and bake for approximately 45 minutes
Remove foil and bake for another 15 minutes until rice is cooked and chicken is done
Give it a stir and serve
