  1. grams unbleached bread flour

  2. 200 grams warm water

  3. grams active sourdough starter (you can order one online )

  4. 10 grams salt

    instructions:

  5. mix all ingredients and knead dough. Cover and let rest in a bowl for 1 hour.

  6. perfom stretch and pulls, let rest for another hour.

  7. repeat second step two more times, then let rest for 4-5 hours

  8. shape into baguettes, and cold proof in fridge overnight.

  9. preheat oven to 420 degrees Fahrenheit, place baguettes in oven. on the lower oven rack place a cookie tray with ice cubes to create steam.

  10. bake for 1 hour, let cool completely
