Tomato Soup
  1. Heat olive oil in a pan over medium heat.

  2. Add the onion and garlic and sauté for 1 to 2 minutes until they begin to brown.

  3. Add the tomatoes and sauté for another 3 to 4 minutes.

  4. Add the vegetable stock, and simmer for 10 to 15 minutes.

  5. Remove from heat and add Irish gin.

  6. Place the mixture in a blender and blend until it becomes a smooth puree.

  7. Pass the mixture through a sieve or strainer to filter out solids, then add the cream, salt, and pepper.

  8. Add a pinch of brown sugar to your taste.

  9. Garnish with coriander or parsley, and then serve. Sláinte!
