Heat olive oil in a pan over medium heat.
Add the onion and garlic and sauté for 1 to 2 minutes until they begin to brown.
Add the tomatoes and sauté for another 3 to 4 minutes.
Add the vegetable stock, and simmer for 10 to 15 minutes.
Remove from heat and add Irish gin.
Place the mixture in a blender and blend until it becomes a smooth puree.
Pass the mixture through a sieve or strainer to filter out solids, then add the cream, salt, and pepper.
Add a pinch of brown sugar to your taste.
Garnish with coriander or parsley, and then serve. Sláinte!
