Cut 1 baguette into diagonal slices that are about 1 inch (2.54 cm) thick
Crack 4 eggs into a large shallow bowl, beat the eggs until well combined
Finely mince 4 cloves of garlic and add to the egg mixture
Finely chop a handful of fresh parsley and add about 2 tablespoons (7.60 grams) into the egg mixture
Season the mixture with sea salt & black pepper, mix the egg mixture together until everything is well mixed together
Add 1 cup of breadcrumbs into a large shallow bowl, season with a generous ¼ tsp (2 grams) sea salt and mix together
Heat a large fry pan with a medium heat and add in a generous ½ cup of sunflower oil
Meanwhile coat the slices of bread, first into the egg mixture, making sure there is plenty of garlic coating the bread and then into the breadcrumbs
After heating the oil for about 5 minutes, start adding the coated slices of bread into the pan, cook in batches to not over-crowd the pan, after 60 to 75 seconds flip to fry the other side, after another 60 to 75 seconds remove from the pan and transfer to a dish with paper towels, continue to cook in batches until done, serve at once, enjoy!
