  1. Mix water, yeast + sugar. Set aside until foamy.

  2. In a bowl, combine flour + salt + lemon zest.

  3. Pour in yeast mix + olive oil, mix to a sticky dough.

  4. Cover, let rise 2 hours.

  5. Mix again, then rise another 1–1.5 hours.

  6. Heat oil to 170–180°C.

  7. Scoop rough balls of dough, fry until golden, flipping once.

  8. Drain on paper towel.

  9. Dust or roll in sugar + cinnamon, or icing sugar + cinnamon.
