Mix water, yeast + sugar. Set aside until foamy.
In a bowl, combine flour + salt + lemon zest.
Pour in yeast mix + olive oil, mix to a sticky dough.
Cover, let rise 2 hours.
Mix again, then rise another 1–1.5 hours.
Heat oil to 170–180°C.
Scoop rough balls of dough, fry until golden, flipping once.
Drain on paper towel.
Dust or roll in sugar + cinnamon, or icing sugar + cinnamon.
