In a large bowl, combine the butter, the sugar, and the brown sugar. Use a stand mixer or handheld mixer to beat together until it is smooth and creamy.
Add the eggs, vanilla extract, salt, baking soda, and about half of the flour to the butter mixture to the cookie batter.
Once ingredients are mixed into the batter, add in the remaining all purpose flour. Beat together until it is forms a smooth cookie dough.
Add the mini semi-sweet chocolate chips. Stir together until they are evenly distributed throughout the dough.
Transfer the Pizookie dough into a pan lined with parchment paper or that you lightly coat with non-stick cooking spray. Gently press the cookie dough into the pan, no more than half inch in thickness.
Air Fry at 350° Fahrenheit for 16-20 minutes until the Pizookie is golden brown and the pizookie has crispy edges. Remove from Air fryer and let cookie cool for a couple minutes.
Remove the Pizookie from pan, slice and then serve.
For an extra delicious dessert, top warm cookie with scoops of vanilla ice cream, or drizzle with hot fudge or chocolate syrup.
