Season chicken with adobo, paprika, Italian seasoning, and black pepper
Thinly slice a whole onion and place half on the bottom of the baking dish
Place seasoned chicken on top of the onion slices
Place remaining onion slices on top of the chicken
Bake uncovered at 375 degrees for at least 15 minutes
Mix together olive oil, white vinegar, water, lemon juice, Dijon mustard, black pepper, and chicken bouillon to make the sauce
Pour sauce over the chicken
Cover and cook for an additional 30 minutes or until chicken reaches 165 degrees internally
