Curried Pumpkin Soup
  1. Mix pumpkin and coconut milk powders in a medium-sized zip lock freezer bag.

  2. Pack pumpkin seeds separately.

  3. Pour dry soup mixture into the pot; add 1 cup water and stir well.

  4. Place pot over medium heat and bring to a boil, stirring occasionally.

  5. Season to taste with salt and pepper.

  6. Remove from heat, sprinkle with pumpkin seeds over soup and serve.

  7. Bring 1 cup water to a boil.

  8. Carefully pour hot water into the bag with the dry soup mixture; stir well and seal.

  9. Let sit in a cozy for 5 minutes.

  10. Serve topped with pumpkin seeds.
