Crispy Shoestring Fries
  1. Slice russet potatoes on a mandolin

  2. Lay them flat and slice into matchsticks

  3. Wash off the starch in water and then dry on paper towels

  4. Fry at 160-170C in cooking oil until golden brown

  5. Move them around often so that they don't burn

  6. Serve with salt, Parmesan cheese, chives, or anything you fancy
