Blend wet ingredients together until smooth.
In separate bowl, whisk dry ingredients together until combined.
Fold wet and dry ingredients together gently until batter is uniform.
Prepare muffin tins with liners or grease, using only every-other well.
Fill each well (preference is to leave a space between each for better muffin tops)
Sprinkle with finishing sugar (coarse)
Bake. Mini muffins: 350degrees for 12-15 minutes. Regular muffins: 415degrees for 6 min and 12 min at 350.
