Prepare Chicken
Cut chicken into bite-sized pieces.
Combine flour, cornstarch, baking powder, salt, white pepper, egg, and water to make batter.
Coat chicken in batter.
Fry Chicken
Heat oil to 175°C.
Fry chicken pieces for 5 minutes.
Remove chicken and fry again for extra crispiness.
Make Sauce
Combine sugar, brown sugar, garlic powder, crushed red peppers, rice vinegar, soy sauce, ginger, chicken broth, chicken brilliance, and hoisin sauce.
Mix water and cornstarch for slurry.
Add slurry to sauce and cook until thickened.
Toss fried chicken in sauce.
