  1. Cut and roast veggies at 400F for 25 mins, until slightly charred.

  2. Cook rice (and lentils)

  3. Make peanut butter sauce, combine peanut butter, ginger, and honey. Stir and add warm water as needed to make it pourable.

  4. Combine veggies and rice. Top with PB sauce and green onions.
