  1. Heat oil in a soup pot over medium heat. Add garlic, leeks and celery. Cook for about 8 minutes or until veggies have started to get translucent.

  2. Add all remaining ingredients to the pot. Cover and bring to a boil and then lower to a simmer. Simmer for 20-25 minutes or until everything is cooked through.

  3. Let cool and dig in.
