Pad Thai Noodles

    Sauce

  1. Soak noodles in water until flexible, then drain

  2. Mix tamarind, fish sauce, and palm sugar until smooth to make sauce

  3. Heat oil in a hot pan or wok

  4. Add garlic and shallot and stir briefly

  5. Add dried shrimp if using

  6. Add shrimp/chicken and tofu and cook until nearly done. Remove from wok.

  7. Add drained noodles and sauce, toss until noodles are soft and coated

  8. Push noodles aside, crack egg, scramble, and mix in. Add protein back in.

  9. Add bean sprouts and chives and toss quickly

  10. Serve with peanuts, chili flakes, and a squeeze of lime
