Peel and cut your potatoes, place in a large pot, cover with water and bring a boil. Cook until fork-tender, drain and mash or use a potato ricer
Place the mashed potatoes, mozarella, parsley and cornstarch, in a large bowl and mix until a dough is formed.
Divide the dough into 4 portions and roll each piece into a long rope about 1-inch thick. Cut the rope into 1 ½-inch long pieces. Repeat with remaining 3 pieces of dough.
In a deep pan add 2 inches of oil until medium high heat. Fry for 10 minutes or until golden brown and crisp. Serve with your choice of dip/sauce. Devour!
