Creamy Tuscan Sausage Pappardelle
  1. Boil salted water and cook pappardelle until al dente. Reserve ½ cup pasta water before draining.

  2. Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned and slightly crispy (6–8 minutes).

  3. Add garlic and cook 30 seconds. Stir in sun-dried tomatoes and red pepper flakes.

  4. Pour in chicken broth and heavy cream. Simmer 3–4 minutes until slightly thickened.

  5. Stir in spinach until wilted. Add parmesan and mix until creamy. If needed, add a splash of reserved pasta water.

  6. Add cooked pasta and toss until fully coated.

  7. Top with fresh parsley and extra parmesan.
