  1. Rinse the bulgur and let it soak in fresh water for 15 minutes.

  2. Chop the parsley and mint leaves finely.

  3. Chop the onion finely.

  4. Chop the tomatoes finely, removing the stems.

  5. Add the chopped parsley, mint, onion, and tomatoes to a large salad bowl.

  6. Add the soaked bulgur, lemon juice, olive oil, salt, and pepper.

  7. Mix all the ingredients well.

  8. Optional: Add the lemon zest for extra freshness.
