Preheat oven to 500F. In a bowl, add steak, lime, tequila, honey, soy sauce, and half of the seasoning blend; toss to combine and set aside.
On a large sheet pan lined with foil, add vegetables and toss with olive oil and remaining seasoning. Spread in an even layer then add steak to the sheet pan, pouring any excess marinade over the vegetables. Cook in preheated oven until slightly charred, about 10 minutes.
Serve with warm tortillas and choice of toppings.
