Prepare the Syrup: In a saucepan over medium heat, mix the remaining ¼ cup water, ½ cup honey, and a pinch of salt. Bring to a boil, stirring continuously, and let it boil for about 5 minutes.
Combine and Whip: Carefully pour the hot syrup into the gelatin mixture. Add ½ teaspoon vanilla extract and a shake of cinnamon. Using a mixer, start on low speed to combine, then increase to high and whip for approximately 8 minutes, until the mixture forms stiff peaks.
Set the Marshmallows: Quickly transfer the fluffy mixture into a parchment-lined container, spreading it evenly. Refrigerate for about 30 minutes to set.
Cut and Serve: Once set, remove from the container and cut into 20 pieces. Store them in the fridge.
