  1. Mix the wet ingredients until well combined (can use an electric mixer)

  2. Sift through the dry ingredients and mix until well combined

  3. Let batter sit for 5 minutes to thicken

  4. Lightly grease a non-stick pan with some cooking spray on low-medium heat

  5. Scoop ¼ cup of the batter onto the pan and cook on low medium heat for about 2 mins then flip and cook for another 1-2 minutes

  6. This recipe makes 4-5 medium sized pancakes which is equal to one serve

  7. Serve with sugar free maple syrup, extra greek yogurt or fruit of choice
