Melt butter in stock pot
Saute 2 diced yellow onions and 2 Tbsp minced garlic
Add 1 can Rotel tomatoes, undrained
Add 2 Tbsp Cumin, 1 ½ Tbsp Oregano, ¼ tsp cayenne, salt and pepper to taste
Add 5-6 cups chicken broth
Add 4 cans Great Northern Beans, undrained
Bring mixture to a boil
Reduce heat and add meat from 1 rotisserie chicken, 3 cups grated monterrey jack and 1 Cup sour cream
Heat through
