Season chicken well with salt & pepper
Sear in hot pan with neutral oil, 2-3 min per side
Add to slow cooker with garlic, Italian seasoning, paprika, and broth
Try to keep chicken in an even-ish layer
Cook LOW for 7–8 hours (or HIGH for ~4 hours, but LOW is better texture)
Stir in heavy cream, parmesan, sun-dried tomatoes
Add spinach on top
Cover and cook 20–30 more minutes until spinach is wilted and sauce comes together
