In a skillet over medium heat, melt 1 Tbsp. butter.
Add chicken breasts and cook until browned on both sides.
In a crock pot, layer sun dried tomato strips, grated Parmesan cheese, and Italian seasoning.
Place the browned chicken breasts on top of the layers.
Add chopped spinach on top of chicken breasts.
In the same skillet, melt 1 stick of butter.
Mix in 2 cups grated Parmesan cheese and 1 cup heavy cream.
Pour the mixture over the chicken and spinach in the crock pot.
Cover and cook on low for 4-6 hours or until chicken is cooked through and tender.
Serve hot with pasta or bread.
