Preheat your oven to 180 degrees Celsius
Line a 30cm cake tin with baking paper
Boil the potatoes until soft, then place them in the cake tin and mash them down and up the edges using a glass and then a spoon
Add the vegetables (spinach, onions, peppers, vegan Parmesan, chillis)
Mix the eggs with the turmeric, cumin seeds, coriander seeds and salt, then whisk
Add the egg mixture to the cake tin
Place in the oven for 40 mins and enjoy!
