Preheat: Set your oven to 425°F and line a baking sheet with foil or parchment paper.
Butterfly the Chicken: Place your hand flat on top of the chicken breast. Using a sharp knife, slice horizontally through the thick side of the breast, cutting almost all the way through but leaving a small hinge. Open the breast up so it lies flat.
Oil & Season: Brush both sides of the opened chicken with olive oil. Sprinkle your seasoning mix evenly over the meat.
Bake: Place the chicken on the baking sheet and bake for 15 to 20 minutes.
Rest and Serve: Remove from the oven and loosely cover with aluminum foil for 5 minutes. This allows the juices to redistribute, yielding a much juicier result.
