Eggs Benedict Chaffles
  1. Preheat a 4” mini waffle maker.

  2. In a small bowl, whisk together all of the chaffle ingredients.

  3. Divide the batter in half and add about 4 tablespoons of the batter to the heated waffle iron.

  4. Close the lid and cook for 4 minutes.

  5. Remove chaffle to a wire rack to cool and repeat with the remaining batter.

  6. To make Hollandaise Sauce, place the egg yolks, lemon juice, water, salt and pepper into a jar.

  7. Heat the butter in a small saucepan until beginning to bubble.

  8. Pour the melted butter into the jar with the yolks and blend until the sauce thickens.

  9. Make poached eggs using your favorite method.

  10. Assemble the Eggs Benedict with chaffles, poached eggs, and toppings.
