Avocado Bagels
  1. Preheat the oven to 350°F (180°C). Line a baking sheet with parchment and lightly oil it.

  2. Scoop out the avocado, remove any dark spots, and mash until smooth. Measure 150 g of green puree.

  3. In a bowl, mix mashed avocado with yogurt until creamy.

  4. Add flour, baking powder, and salt. Stir with a fork until the dough starts to come together.

  5. Lightly oil your hands and knead briefly until soft and uniform. Add a bit more flour only if too sticky.

  6. Divide into 4 portions. Roll each into a ball, then poke a hole in the center to form the bagel shape.

  7. Place on the baking sheet, brush with almond milk, and sprinkle bagel seasoning.

  8. Bake 20–22 minutes at 350°F (180°C) until golden. Let cool fully before slicing.
