Knead the plain flour, salt, and water together to form a firm dough.
Cover the dough and let it rest at room temperature for 15 minutes. Knead once more until the dough is smooth and free of lumps.
Bring a medium pot of salted water to a boil.
Flatten the dough to about the thickness of your thumb. Hold the dough over the pot of water and use scissors to slice thin lengths of dough off, rotating as needed.
If doubling the recipe for four, you may want to do this in two batches.
Once the noodles float, drain and briefly rinse them with a little cold water to prevent sticking. Serve as desired.
