Peel, core and slice the apples.
Melt the butter in a pan.
Add the apples sugar and cinnamon.
Cook for about 5–8 minutes, until the apples begin to soften but still keep their shape.
Transfer to a buttered baking dish.
Beat together butter and sugar until pale and fluffy.
Add the eggs one at a time.
Fold in the flour.
If needed, add 2 tbsp milk to create a soft batter.
Spread the sponge mixture evenly over the apples.
Bake at 180°C (350°F) for 35–40 minutes, until golden and springy.
