  1. Preheat oven to 180°C and butter a 20 cm square cake tin.

  2. Purée sweet potato in a food processor with all ingredients except yoghurt and polenta.

  3. Stir in yoghurt and polenta and pour into prepared tin.

  4. Bake for 45 minutes or until a fine skewer inserted in centre comes out clean.

  5. Cool a little before turning out and cutting into squares.
