  1. Preheat the oven to 180°C (350°F)

  2. In a bowl, mix pancake mix, milk, and allulose (or sugar) until smooth. The batter should be slightly runny

  3. Lightly grease your molds or cups with oil. The molds should be about 1.5-2 times larger than a standard cupcake mold. Small paper cups work well too

  4. Pour the batter about ⅓ full

  5. Add mozzarella cheese

  6. Crack one egg into each cup

  7. Sprinkle a pinch of salt

  8. Bake for about 20 minutes
