Preheat the oven to 180°C (350°F)
In a bowl, mix pancake mix, milk, and allulose (or sugar) until smooth. The batter should be slightly runny
Lightly grease your molds or cups with oil. The molds should be about 1.5-2 times larger than a standard cupcake mold. Small paper cups work well too
Pour the batter about ⅓ full
Add mozzarella cheese
Crack one egg into each cup
Sprinkle a pinch of salt
Bake for about 20 minutes
