Heat oil in a large frying pan over medium-high heat. Add mince. Cook, breaking up with a wooden spoon, for 5 minutes or until browned. Add garlic. Cook, stirring, for 1 minute. Add kecap manis and fish sauce. Stir to combine. Stir in unheated rice. Cook for 2 minutes or until heated through. Remove from heat. Stir in pomelo and lime juice.
Divide mince mixture among lettuce leaves. Top with cucumbers, red onion and tomato. Sprinkle with coriander and chilli. Drizzle with extra kecap manis. Serve with lime wedges.
