Add vinegar, water, and honey to a saucepan and heat on low until the honey dissolves.
Remove from the heat and allow to cool while you prepare your avocados.
Slice avocados in half, then each half 4 x (you should get 8 slices per avocado).
Add galice and red pepper flakes (if using) to a glass jar along with the avocado slices.
Carefully pour over vinegar mixture into the jar.
Cover the jar witht he lid and refrigerate 2-3 hours.
