Prep veggies, aromatics, and proteins.
To a pot add veggie oil, cook aromatics until fragrant. Add chicken, cook through.
Top with 2 to 2 ½ cups of chicken stock. Add 1 can coconut milk. Add spices and seasonings. Let simmer. Serve enjoy!
I like keeping in the aromatics for the rustic look/aroma. If you want more refined you can fish it out.
