Vegan Chocolate Chip Cookies
  1. Preheat the oven to 375°F (190°C).

  2. In a large bowl, cream together the vegan butter, brown sugar, and granulated sugar until light and fluffy.

  3. Add the vanilla extract and mix until combined.

  4. In a separate bowl, whisk together the baking soda, salt, and flour.

  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.

  6. Fold in the vegan chocolate chips.

  7. Scoop the dough by the tablespoonful onto a parchment-lined baking sheet, spacing them about 2 inches apart.

  8. Bake for 10-12 minutes, or until the edges are golden brown.

  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
