Season the chicken: Drizzle olive oil, lightly season the chicken pieces with Lawry's Seasoning, Paprika, Lemon Pepper, Cumin. Mix to cover chicken
Sear the chicken: Heat a good amount of oil in a large pot over medium-high heat. Add the chicken and brown on all sides for 5-7 minutes. Remove and set aside.
Add chopped onion & brown
Toast the rice: In the same pot, add chopped tomato & rice Toast the rice, stirring, for 2-3 minutes until lightly golden.
Cook with chicken: Return the browned chicken to the pot, nestling it into the rice.
Add liquid and seasoning: Pour in the water or broth. Stir in the Knorr bouillon, tomato sauce & stir until dissolved. Add cilantro or parsley
Cover dish and cook on high for 10 minutes
After 10 minutes, turn off heat and leave on stove, covered, for 5 minutes
After 5 minutes, push aside to a cooler spot, leave covered for 10 minutes
After 10 minutes, fluff the rice and serve hot.
