Prepare Dough
Cool water to <60°F.
Mix water and yeast.
Add flour and olive oil, mix 2 minutes.
Add sugar and salt, mix on low for 10 minutes.
Cover and rest 1-3 hours.
Divide into dough balls, shape, and seal seams.
Place in lightly oiled containers, cover, and refrigerate 1-3 days.
Let come to room temperature before baking.
