Prepare Dough

  1. Cool water to <60°F.

  2. Mix water and yeast.

  3. Add flour and olive oil, mix 2 minutes.

  4. Add sugar and salt, mix on low for 10 minutes.

  5. Cover and rest 1-3 hours.

  6. Divide into dough balls, shape, and seal seams.

  7. Place in lightly oiled containers, cover, and refrigerate 1-3 days.

  8. Let come to room temperature before baking.
