Crispy Smashed Potato Salad
  1. Boil the potatoes until fork tender

  2. Transfer to a baking sheet and press down with a cup to smash them flat

  3. Brush or spray with olive oil

  4. Bake in the oven for 45-60 minutes or until golden and crispy

  5. Allow the potatoes to cool slightly once baked

  6. Add in the cucumber, pickles, spring onion, dill, and dill pickle dip

  7. Toss together until well combined
