Chicken Florentine Meatballs
  1. Preheat oven to 400F

  2. In a large bowl, combine eggs, milk, spinach, bread crumbs, Parmesan cheese, dried minced onion, garlic clove, Italian seasoning, garlic powder, salt, and pepper and mix well

  3. Add ground chicken and mix well

  4. Shape mixture into balls

  5. Grease a baking sheet and place meatballs on it

  6. Bake for 25 minutes

  7. In a large skillet sauté chopped garlic and chopped onion for a few minutes

  8. Add crushed tomatoes and 1 cup of water

  9. Season with salt, pepper, and Italian seasoning

  10. Simmer for 5 minutes

  11. Stir in heavy cream, chopped parsley, and baby spinach

  12. Add baked meatballs to the sauce and simmer together for 10-15 minutes

  13. Serve over rice, pasta, polenta, farro, or spaghetti squash
