Preheat oven to 400F
In a large bowl, combine eggs, milk, spinach, bread crumbs, Parmesan cheese, dried minced onion, garlic clove, Italian seasoning, garlic powder, salt, and pepper and mix well
Add ground chicken and mix well
Shape mixture into balls
Grease a baking sheet and place meatballs on it
Bake for 25 minutes
In a large skillet sauté chopped garlic and chopped onion for a few minutes
Add crushed tomatoes and 1 cup of water
Season with salt, pepper, and Italian seasoning
Simmer for 5 minutes
Stir in heavy cream, chopped parsley, and baby spinach
Add baked meatballs to the sauce and simmer together for 10-15 minutes
Serve over rice, pasta, polenta, farro, or spaghetti squash
