To soften raw cashews, soak for at least 2 hours or up to overnight covered in water. Alternatively, if you do not have time to wait, bring a small pot of water to a boil and add the cashews. Boil for 10 minutes, then strain and transfer to a sheet tray to cool.
Once cashews have softened (and cooled if necessary), combine all ingredients in a food processor or blender and process until smooth, scraping down the sides with a spatula as needed.
Transfer to a serving bowl and enjoy with your favorite crackers, veggies or chips!
Store in an airtight container in the refrigerator for up to 1 week.
