Loaded Sweet Potato Egg Bake
  1. Boil sweet potatoes until tender

  2. Mash boiled potatoes in a baking pan, making the bottom thinner and pushing the potato up the side walls to form a crust

  3. Oil and season the potato crust

  4. Bake the potato crust at 400°F for 20 minutes to let it set and crisp

  5. Add eggs, cottage cheese, and seasonings (salt, pepper, garlic, smoked paprika) to a blender and blend until smooth

  6. Pour egg mixture into the potato crust

  7. Add jalapeño, onion, bell pepper, turkey bacon, spinach, and other desired ingredients on top

  8. Top with mozzarella and parmesan cheese

  9. Bake at 400°F for 30-40 minutes until set

  10. Cut into 9 squares and serve
