Ingredients
Rinse the Rice: Place rice in a fine-mesh sieve and rinse under cold water until the water runs clear. Note: this is crucial for removing excess starch so the rice stays fluffy instead of gummy.
Toast (Optional): In a medium saucepan, melt the butter/oil over medium heat. Add the rinsed rice and garlic, stirring for 1–2 minutes until the rice looks slightly opaque and the garlic is fragrant.
Simmer: Add the water/broth and salt. Bring to a boil, then immediately reduce heat to the lowest setting. Cover with a tight-fitting lid and simmer for 15–18 minutes (or according to your rice package instructions).
The Rest: Turn off the heat but do not open the lid. Let the rice sit undisturbed for 5–10 minutes. This allows the steam to finish cooking the grains perfectly.
Finish & Fluff: Remove the lid and fluff with a fork. Gently stir in the fresh cilantro and lime juice just before serving so the herbs stay bright and green.
