Slow Cooked Vegetable Curry
  1. Into a fry pan over medium heat, I've got a little bit of oil. And to that, we're going to add in one brown onion, which I have just peeled and chopped, one large red apple, which I have just diced, and a couple of teaspoons of finely minced ginger.

  2. And we're just going to cook this, stirring, for about 7 to 8 minutes or until the onions and the apples have softened.

  3. Next, we're adding in two teaspoon of minced garlic, about two cloves. And we're going to stir in about a/4 of a cup of mild curry paste. Now, we're just going to stir this around for about 2 to 3 minutes.

  4. Season this with a little salt and pepper. And this is ready to go into the slow cooker. I'm using my 5 ½ L slow cooker today. We've got that lovely onion and apple mixture in. Next, we're going to add the rest of our veggies.

  5. First, I've got a mediumsized sweet potato, which I've peeled and diced. It's about 600 g worth. Half a small cauliflower about maybe 400 g which I've just broken up into little fuettes or as my mother used to call them magic little white trees. Two 400 g cans of chickpeas which I have just drained and rinsed. A 400 g can of diced tomatoes. and 1 and ¾ cups of vegetable stock. Give that a gentle stir together.

  6. And all that's left to do is to put on the lid and switch on the pot. We're going to put this on the high setting for 4 hours. You could also use the low setting and do it for about 6 to 8 hours. But basically, we're just going to cook it until the vegetables are nice and tender.

  7. Now, once the lid is on and the pot is switched on, don't take the lid off. Leave it on. Let that steam start generating in there. Let those veggies cook in their own moisture and steam. Otherwise, you open the lid, all steam comes out and it won't cook properly.

  8. A few hours later, we can take off the lid. Oh, beautiful. I'll just give that a quick stir. Stir through half a cup of coconut milk and a couple of big handfuls of baby spinach leaves. Pop the lid back on and allow that to stand for about 15 minutes and then we'll be ready to serve.
