Honey Teriyaki Chicken & Rice
  1. Add boneless skinless chicken thighs to slow cooker

  2. Add soy sauce, dark soy sauce, honey, mirin, ginger paste, and garlic paste to the slow cooker

  3. Cook on high for 4-5 hours or on low for 5+ hours until chicken is cooked through

  4. Mix cornstarch and cold water in a small bowl to create a slurry

  5. Add cornstarch slurry to the slow cooker after chicken is done and let sit uncovered for 15-20 minutes to thicken sauce

  6. Cook rice separately according to package directions

  7. Mix cooked rice directly with the chicken and sauce in the slow cooker

  8. Prepare low-cal yum yum sauce by mixing together low-fat mayo, greek yogurt, sriracha, salt, pepper, and garlic powder in a bowl

  9. Add milk as needed to reach desired consistency

  10. Portion into 8 servings and top with chopped green onions

  11. Serve and enjoy, or store portions frozen for later reheating
