Chicken & Bacon Creamy Mash Pie
  1. First, peel and cut up the potatoes. Bring a pan of water to a boil and begin to cook the potatoes ready to mash.

  2. Fry off the bacon and leeks in a frying pan with low calorie cooking spray.

  3. Add the chicken and fry off until thoroughly cooked through. Add the flour and cook for a further 2-3 mins.

  4. Season with salt & pepper, then add the stock, creme fraiche, mustard, thyme, mix well and leave this to simmer until thick and creamy.

  5. Add to an oven proof dish, layer on your mash potato, sprinkle over the cheese and bake for 30minutes on 190c (all ovens will vary). The cheese should be golden and bubbly.

  6. Serve and enjoy!
