Vanilla Hot Milk Sponge Cake
  1. Line a 30x20x5cm brownie or slice rectangular pan on the base and sides with parchment. Preheat oven to 160C.

  2. In a saucepan heat the milk and butter until the butter has melted and stir in the salt. Set aside.

  3. Sift the flour and baking powder together into a bowl.

  4. In a mixer, whisk the sugar, eggs and vanilla for 5 minutes until syrupy thick and pale yellow.

  5. Add the hot milk mixture and whisk for 15 seconds until incorporated.

  6. Fold in the flour mixture on low speed until smooth.

  7. Pour into the prepared tin and bake for 30-35 minutes or until the centre springs back when gently pressed.

  8. Cool on a cake rack.

  9. For the frosting, beat the butter and sour cream until smooth.

  10. Sift the icing sugar and add vanilla, then beat until combined.

  11. Spread over the cooled cake and add sprinkles.
